Yesterday had been an afternoon of baking, tasting and munching. I made the most basic cookies with added decarbed sugar leaves I brought along from my last harvest. As the ground sugar leaves went thru the decarbolyxialtion process, I simply added it as special ingredient to spice-up the cookies a bit. You will find the recipe below.
300g Flour 2 teaspoon canna sugar leaves (decarbed, pulverized) 180 g cold Butter, cut into cubes 100 g fine sugar or 6 tablespoons stevia powder as sugar substitute 3 egg yolks 1 pack Vanilla sugar from Dr. Oetker grated rind of 1 lemon strawberry/ peach marmalade confectioner´s sugar
1… Prepare the dough by sifting the flour on the work surface. sift the 2 teaspoons ground sugar leaves onto the flour and mix throughly until sugar leaves are well distributed. Make a hollow shape in the middle of the flour and add the egg yolks, sugar or stevia, vanilla sugar and grated lemon peel.
Add the cubed butter, mix and knead everything with your hands to make a smooth dough. If dough is too dry, add a tablespoon of milk and mix once more until milk is well blended into the flour. Refrigerate the dough for about 30 minutes.
2… Roll -out the dough on a floured surface, flatten it thinly using the rolling pin and use cookie forms to cut out various shapes, use a thimble to cut the hole in the middle (optional). Place the cut-out dough on a baking tray with paper parchment and bake these for about 8-10 minutes til cookies are golden brown in color.
3… Allow the cookies to cool down on the tray… then carefully spoon or spread the marmalade onto one side of one cookie… topping it with the 2nd cookie. Arrange the cookies on a platter and sprinkle confectioner´s sugar all over the cookies.
The cookies are now ready to be placed in a cookie tin can. By closing the lid, each piece will become softer and lovely to munch after about 3 days. I have tasted 3 cookies, it is potent because after about 15 minutes after munching, I experienced a tingle-feeling of relaxation. The cookies, just like the canna crescent cookies I previously posted are really potent. You have to try decarbing your sugar leaves and save the cuttings when you prepare your buds for drying. I used the oven method and after grinding into fine consistency, I put it in an open jar to continue drying just in case some moist developed during the process..
The ground sugar leaves are a mixture of the Green Poison and Amnesia Platinum harvest. After the decarb process using the oven, I made a glass full of them to be mixed as spice for my future baking. If you are a grower, do not throw your sugar leaves cut from your buds, they are best to add as spice to whatever baking you are up to.
